Day 30- Breakfast Recipe

Start off the morning right with a mushroom and egg frita:



Ingredients:
  • 1.5 cups of fresh spinach
  • 4 eggs
  • 1 cup diced red bell peppers
  • 1/5 cup diced onions
  • 1 cup ricotta cheese
  • 3/4 cup freshly grated Parmesan cheese
  • 3/4 cup chopped portbello mushrooms
  • 1/2 cup finely shopped scallions
  • 1/4 teaspoon dried basil
  • sea salt and pepper, to taste
Directions:
1. Preheat oven to 375 degrees
2. In a large bowl, whisk together all ingredients until well mixed. Coat baking dish with butter and fill with the spinach mixture.
3. Bake for 30 minutes, or until browned and set. Let cool for 20 minutes, cut in wedges and serve.
