This is what I had for breakfast this morning, needless to say I need to go grocery shopping. To my surprise I actually really enjoyed this dish, especially since I have been on a kale kick lately. This recipe is super easy and can be ready to eat within minutes.
Ingredients:
- 4 cups of fresh kale
- 2 tablespoons of olive oil
- 1/4 cup sun dried tomatoes
- 1/2 lemon
- sea salt and fresh ground pepper to taste
Directions:
- Add olive oil and kale to a pan, saute on low heat until kale is slightly wilted
- Squeeze half the lemon over kale
- Sprinkle with salt and pepper
- Remove from heat and serve with sun dried tomatoes mixed in
