Day 218- Recipe: Rice Noodle Chicken Soup

One of my favorite places to go for lunch is Whole foods; the one next to my work has the best selection of different types of pre-made meals. You can go pick out a piece of seafood or meat and they will cook it anyway that you want. They also have a great Asian section with an assortment of sushi or noodle soups. My favorite soup that they make is called the Chicken Hunan Noodle soup. I haven't been able to perfect this soup, but here is my closest attempt so far.

Ingredients:
  • 1 cartoon Organic Free-Range low sodium Chicken Broth
  • 4 cups Water
  • 3 Organic Chicken Breasts
  • 1 package Rice Noodles
  • 4 stalks of Baby Bok Choy
  • 2 cans Straw Mushrooms
  • Salt and Pepper to taste
  • 2 Jalapenos
  • 1 Lemon
Directions:
  1. Saute chicken for about 5 minutes, just to slightly cook it
  2. In large pot add chicken stock and water
  3. Add in chicken
  4. Let broth get to a bubble
  5. Add in bok choy, jalapeno, mushrooms, noodles, salt and pepper
  6. Cook until noodles are soft and bok choy has begun to wilt.
  7. Squeeze in half a lemon (use the other half to garnish each dish)

    (you have a total of 4 "cartoons" of chicken broth. i think you forgot the chicken)
