Ingredients:
- 1 cartoon Organic Free-Range low sodium Chicken Broth
- 4 cups Water
- 3 Organic Chicken Breasts
- 1 package Rice Noodles
- 4 stalks of Baby Bok Choy
- 2 cans Straw Mushrooms
- Salt and Pepper to taste
- 2 Jalapenos
- 1 Lemon
Directions:
- Saute chicken for about 5 minutes, just to slightly cook it
- In large pot add chicken stock and water
- Add in chicken
- Let broth get to a bubble
- Add in bok choy, jalapeno, mushrooms, noodles, salt and pepper
- Cook until noodles are soft and bok choy has begun to wilt.
- Squeeze in half a lemon (use the other half to garnish each dish)
