Day 294- Cauliflower "Mashed Potatoes"
Ingredients:
- 1 large onion, chopped
- 2 cloves garlic, minced
- ¼ tsp cayenne pepper
- 1-2 Tbsp organic, unrefined coconut oil
- 1 head of cauliflower, chopped
- ¼ cup water
- Sea salt to taste
- Lemon juice to taste
Preparation:
- Sauté onion, garlic, and cayenne pepper in oil.
- Add cauliflower and water.
- Simmer until tender.
- Use a masher to purée cauliflower.
- Add sea salt and lemon juice.
