Day 294- Cauliflower "Mashed Potatoes"

Ingredients:
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • ¼ tsp cayenne pepper
  • 1-2 Tbsp organic, unrefined coconut oil
  • 1 head of cauliflower, chopped
  • ¼ cup water
  • Sea salt to taste
  • Lemon juice to taste
Preparation:
  1. Sauté onion, garlic, and cayenne pepper in oil.
  2. Add cauliflower and water.
  3. Simmer until tender.
  4. Use a masher to purée cauliflower.
  5. Add sea salt and lemon juice.
