Day 299- Maple Roasted Sweet Potatoes

Maple Roasted Sweet Potatoes:
Adapted from Eating Well

Ingredients:
  • 4 large sweet potatoes
  • 1/3 cup pure maple syrup
  • 2 tablespoons butter
  • Juice from 1/2 lemon
  • 1 teaspoon sea salt
  • 1 teaspoon Freshly ground pepper
  • 1/4 teaspoon cayenne pepper
Directions:
  1. Preheat oven to 375 degrees
  2. Peel and cut potatoes into cubes
  3. Place potatoes in a baking dish, add butter, maple syrup, lemon, and salt and pepper
  4. Cover potatoes with a lid and bake for about 40-45 minutes or until potatoes are tender
