Adapted from Eating Well
Ingredients:
- 4 large sweet potatoes
- 1/3 cup pure maple syrup
- 2 tablespoons butter
- Juice from 1/2 lemon
- 1 teaspoon sea salt
- 1 teaspoon Freshly ground pepper
- 1/4 teaspoon cayenne pepper
Directions:
- Preheat oven to 375 degrees
- Peel and cut potatoes into cubes
- Place potatoes in a baking dish, add butter, maple syrup, lemon, and salt and pepper
- Cover potatoes with a lid and bake for about 40-45 minutes or until potatoes are tender
