Adapted from Gluten-free Goddess
Ingredients:
- 4-5 cups fresh green beans (ends trimmed)
- Coconut oil
- 2 large portobello mushrooms
- Sea salt and fresh ground pepper
- 1/4 cup Balsamic vinegar (I used Trader Joe's brand)
Directions:
- Melt coconut oil in pan, enough to coat the pan.
- Add green beans
- Cut up portobello into small cubes
- Saute on medium heat until beans and mushrooms are tender
- Coat vegetables with balsamic vinegar, I used about 1/4 cup but you can add more or less depending on your taste.
- Sprinkle with sea salt and pepper
