Day 245- Halloween Recipe: Toasted Pumpkin Seeds

Last night we carved Pumpkins and made sure that we saved the pumpkin seeds so that we could roast them later for a healthy snack.

  • Rinse pumpkin seeds to remove the pumpkin slim and leftover pulp.
  • I used a coconut oil spray to coat a baking dish, you can do that or use butter, coconut oil, or olive oil.
  • Heat the oven to 200 degrees
  • Coat with pumpkin seeds with celtic sea salt
  • Roast pumpkin seeds until crunchy, but not burnt - about 20 minutes
Health benefits of Pumpkin seeds or Pepitas:
  • May promote prostate health- pumpkin seed contain carotenoids, omega-3 fatty acids, and zinc, which all may help to keep the prostate healthy
  • Protection for men's bones- zinc has been linked to bone mineral density
  • Anti-inflammatory properties
  • A rich source of healthful minerals, protein, and monounsaturated fat
  • Lowering affects on cholesterol- Phytosterols found in pumpkin seeds are believed to reduce blood levels of cholesterol and enhance the immune response.

Day 242- Gym Myths

Myth #1~ Doing 500 crunches a day will get you that 6-pack stomach that you are looking for
  • Sure doing that many crunches will build your abdominal muscles, but that doesn't mean that you will be able to see them. If you really want people to see your muscle definition then it really comes down to cardio and diet. The combination of the two will help you shave off some of the unwanted fat around the mid section. There is no such thing as spot reduction through exercise. And remember that your abdominal muscles are just like any of your other muscles- in that they need a break too.


Myth #2~ Women who lift weights will get big and bulky
  • Women don't have enough testosterone naturally to become that bulky. Yes, you will develop muscle mass and increased bone strength, but the result will be a toned body, not a bulky one. Unless by chance you are taking extra steps to look that way.


Myth #3~ High reps/low weight is best
  • The only time those small pink weights should be used is maybe in an aerobics class, otherwise step up the weight! This way does not burn more fat or does the best job at toning your body. The rule of thumb is however many reps you want to do, pick a weight that fatigues you when you reach that number. If you do 12 bicep curls with good form and you can do more, increase your weight. As we mentioned before, unless it is your goal you will not get bulky.

Myth #4~ You didn't get a good workout unless you are sore the next day
  • Just by getting off the couch and doing something active you have accomplished something. You don't always have to work yourself so hard that you can't walk the next day to make it a successful workout. Being sore means that you torn muscle fibers and usually occurs if you are new to working out or if you have changed up your routine. Soreness is not a marker for how well your workout was. You may want to consider some other factors: did you sweat, did you burn more calories than you would have if you didn't work out, did it boost your mood. Exercise isn't always how it makes your body feel, it can be mental too.

Day 241- Recipe: Chicken Tortilla Soup


Ingredients:
  • 3 organic chicken breast
  • 2 cans of diced tomatoes
  • 2 cans (rinsed) black beans
  • 1/2 bag frozen corn (avoid if gluten-free)
  • 1 packet of Trader Joe's Taco seasoning
  • 1 onion, diced
  • 2 jalapeno, diced
  • 1 carton organic free-range chicken stock
  • 1 cup water
Optional Toppings:
  • 1 avocado, diced
  • shredded cheese
  • crumbled tortilla chips
  • Creme fraiche
Directions:
  1. Boil chicken for about 20 minutes or until no longer pink.
  2. Using two forks shred the chicken
  3. In crock pot add all the ingredients except chicken
  4. Cook on high for about 2 hours, add chicken, and continue to cook for awhile longer
  5. Serve with desired toppings

Day 240- Rats lived longer with only water than when fed Cornflakes

Let me first give you a little bit of information about me. When I moved out of my parents house and went off to college, I decided to live off cereal. I ate cereal and non-fat milk for breakfast, lunch, and dinner. For the most part it was cold cereal like honey bunches of oats or frosted mini wheats, or the healthier, not as sweetened varieties. Life was my all time favorite. I also always had instant hot oatmeal packets in my purse for those times that I was in a hurry and just needed to add hot water.

In some twisted way I believed that this was healthy. When I started my journey in the nutrition profression I read the book, "Beating the Food Giants" by Paul Stitt. In the book Paul writes about his time working for a food corporation where he came upon shocking research studies involving rats and dried cereal.

The study, which apparently started as a joke, had some interesting results. Although the study has never been published, nor has anyone to my knowledge other than Paul seen the study, it still has to make you wonder if the manufacturing of grains is harmful for consumption. Needless to say, it, along with other health assessments, made me open my eyes to my current diet. I'm proud to say that cereal is something that I consume once in a blue moon, and fat-free milk no longer has a place in my home.

Below is some information on the extruding process of grains, and the famous rat/cereal study found by Paul.


PACKAGED CEREALS

These cereals are produced by a process called extrusion. They take the grains from the farmer, pay them a pittance for them, make the grains into a slurry and put them in a tank, a machine called an extruder. The grains are forced out of a little hole at high temperature and pressure and shaped into little o's and flakes and shredded wheat and so forth, or puffed up. A blade slices off each little flake which is carried past a nozzle and sprayed with a coating of oil and sugar to seal off the cereal from the ravages of milk and to give it crunch.

Paul Stitt has written about the extrusion process used for these cereals which treats every grain with very high heat and high pressure and destroys much of the nutrients in the grains. It destroys the fatty acids; it even destroys the chemical vitamins that are added. The amino acids are rendered very toxic by this process. The amino acid lysine, a crucial nutrient, is especially ravaged by extrusion. This is how all the boxed cereals are made, even the ones in the health food stores. They are all made in the same way and mostly in the same factories. All dry cereals that come in boxes are extruded cereals.

The only advances made in the extrusion process are those which will cut cost regardless of how these will alter the nutrient content of the product. Cereals are a multi-billion dollar business which has created huge fortunes. You would think there would be some studies on the effect on man or animals. There are no published studies and there are only two unpublished studies which were done on rats.

THE RAT EXPERIMENTS

Paul Stitt wrote about an experiment conducted by a cereal company in which four sets of rats were given special diets. One group received plain whole wheat, water and synthetic vitamins and minerals. A second group received puffed wheat (an extruded cereal), water and the same nutrient solution. A third set was given water and white sugar. A fourth set was given nothing but water and chemical nutrients. The rats which received the whole wheat lived over a year on this diet. The rats that got nothing but water and vitamins lived about two months. The animals on a white sugar and water diet lived about a month. The company's own laboratory study showed that the rats given the vitamins, water and all the puffed wheat they wanted, died within two weeks---they died before the rats that got no food at all. It wasn't a matter of the rats dying of malnutrition. Results like these suggested that there was something actually very toxic in the puffed wheat itself! Proteins are very similar to certain toxins in molecular structure, and the pressure of the puffing process may produce chemical changes, which turn a nutritious grain into a poisonous substance.

Another unpublished experiment was carried out in 1960. Researchers at Ann Arbor University were given 18 laboratory rats. They were divided into three groups: one group received corn flakes and water; a second group was given the cardboard box that the Cornflakes came in and water; the control group received rat chow and water. The rats in the control group remained in good health throughout the experiment. The rats eating the box became lethargic and eventually died of malnutrition. The rats receiving the Cornflakes and water died before the rats that were eating the box! But before death, the Cornflakes rats developed schizophrenic behaviour, threw fits, bit each other and finally went into convulsions. Autopsy revealed dysfunction of the pancreas, liver and kidneys and degeneration of the nerves of the spine, all signs of insulin shock. The startling conclusion of this study is that there was more nourishment in the box than there was in the Cornflakes. This experiment was actually designed as a joke, but the results were far from funny. The results were never published and similar studies have not been conducted.

Most of America eats this kind of cereal. In fact, the USDA is gloating over the fact that children today get the vast majority of their important nutrients from the nutrients added to these boxed cereals. Many of them are at least 50% sugar; but there are many so-called health food cereals sold in the health food stores, and they are made by the same method. They use whole grains and they may use better quality sweeteners, but they are made by the same method. It may come as a shock to you, but these whole grain extruded cereals are probably more dangerous, because they are higher in protein and it is the proteins in these cereals that are so denatured by this type of processing.

THE EXTRUSION PROCESS

When we put these cereals through an extruder, it alters the structure of the proteins. "Seins", which comprise the majority of proteins in corn, are located in spherical organelles called protein bodies. One study investigated change in protein body, shape and release of encapsulated alphaseins as a result of the extrusion processing. During extrusion, they found that the protein bodies were completely disrupted and the alphaseins dispersed. The results suggest that seins in Cornflakes, particularly extruded ones, are not confined to rigid protein bodies but can interact with each other and other components of the system forming new compounds which are completely foreign to the human body. The extrusion process breaks down the organelles, disperses the proteins and the proteins become toxic. When they are disrupted in this way, you have absolute chaos in your food, and it can result in a disruption of the nervous system.

Day 239- Kombucha “elixir of life?"

First of all what is Kombucha?

Kombucha (kom-boo-cha) is a drink made from fermented sweet tea, using a symbiotic colony of bacteria that is called a scoby. You will also hear this bacteria called the "mother," because of it's ability to reproduce, or a mushroom, due to its appearance.

Kombucha has been noted for it's array of health boosting properties; from preventing cancer, detoxifying the the body, improving digestion, to boosting the immune system and increasing energy.

Organic Acids in Kombucha

  • Glucuronic acid: It is well considered as one of the most significant detoxifiers present in human body. When any sort of toxins successfully enter to liver, they are flushed out via the kidneys by the assistance of Glucuronic acid. There’s no way out to toxins after once glucuronic acid bound them. Day 238- I will Pump You Up...Or Inflame You

If you are an athlete or body builder you may have seen a new product on the market, claiming to increase endurance and vasodilation which may help to increase muscle mass. There are many of these products out there under names such as, Xero Limits EPO, N.O 370, Jack3D, BSN N.O-xplode, NOX Surge, etc. What all of these products have in common is that they are addressing the Nitric Oxide response in the body.

Nitric Oxide is a gas naturally found in the body that's main function is conveying information between cells. Nitric Oxide is involved in three pathways in the body, which we call the Nitric Oxide Synthases (NOS); which are a family of enzymes that catalyze the production of nitric oxide (NO) from L-arginine.
  • nNOS- Neuronal Nitric Oxide Synthases, produces NO in nervous tissue in both the central and peripheral nervous system. This pathway helps to increase cell communication.
  • eNOS- Endothelial Nitric Oxide Synthases, generates NO in blood vessels and is involved in regulating vascular function.
  • iNOS- Inducible Nitric Oxide Synthases, produces NO as a defense mechanism, which may cause increase in body inflammation.
Nitric oxide gives more blood to organs when needed. When working out nitric oxide will release more blood to the areas that you are working, after a meal nitric oxide send more blood to the stomach to help digest food, during sexual stimulation nitric oxide is responsible for the relaxation of blood vessels in the penis allowing for an erection (anti-impotence drugs such as Viagra work in much the same way).

Nitric oxide signaling is mediated in mammals by the calcium/calmodulin controlled isoenzymes eNOS and nNOS; iNOS on the other hand is involved in immune response and is not dependent on calcium/calmodulin.

The problem with the supplements on the market today is that they do not address all three of the nitric oxide pathways. As I mentioned above there is the eNOS, nNOS, and iNOS pathways. The eNOS, and nNOS pathways are what are being addressed in the majority of the NO supplements on the market today, and people are seeing terrific results with them. The issue is that the iNOS pathway is also being turned on and this may be causing problems with increased inflammation. The supplements on the market today contain L-Arginine which can trigger any or all of the three pathways, but having iNOS stimulated is not ideal and can cause some serious damage to the body in the long run.

Day 236- Does Cooking Your Veggies Defeat the Purpose

We hear about the health "freaks" that go on the raw food diet, so we assume that eating our veggies raw is how to receive the most nutrients, right? Contrary to what you may think, research has shown that not all vegetables are created equal when it comes to nutrients loss during cooking. It has been shown that we may even benefit from cooking certain vegetables as it may unlock certain nutrients that will be easier for our bodies to digest and assimilate.
So now the question is, "to cook or not to cook."

Cruciferous vegetables, such as broccoli have been shown to be the most sensitive to cooking. If cooked for more than a few minutes, the time it takes you to walk to another room, answer your phone, and tell them you have to call them back, may have depleted may of the nutrients in these veggies. The heat from cooking may eliminate the antioxidants, and the enzyme that breaks down chemicals called glucosinolates into cancer-fighting agents. So maybe I was right to turn down that bowl of broccoli soup that my parents would try to make me eat; I knew that I wasn't missing anything nutritionally.

Carrots on the other hand have been shown to be more nutritious when cooked, since heating causes the vegetable to soften slightly, unlocking some of the nutrients. Green beans, beets, and garlic also all did well with heat - maintaining beneficial phytonutrients after most kinds of cooking.

We are also aware of our fat soluble vitamins like vitamin A. Carotenoids are the pigments in vegetables and fruits that are responsible for the red, yellow, and orange coloring. Carotenoids are also found in dark green vegetables, like spinach. Carotenoids convert to vitamin A in the body and have been found to have antioxidant activities that may help to protect our cells against damage caused by free radicals. So eating your tomatoes and spinach drizzled with olive oil, may help your body to absorb nutrients better.

A study at Iowa State University had participates eat salad greens and tomatoes with various types of dressings; fat-free, low-fat, or dressing that contained olive oil. They then took blood samples to see precise measurements of the amounts of nutrients absorbed. They found that, not to their surprise, people who had eaten fat-free or low-fat dressings did not absorb the beneficial carotenoids from the salad, and that only when they had eaten the oil-based dressing did they get the nutrients.

Lycopene, is a potent antioxidant found in tomatoes, and is responsible for tomatoes red pigment. A 2002 study published in Journal of Agriculture and Food Chemistry, found that cooking actually boosts the amount of lycopene in tomatoes. In the study lycopene rose 35% after the tomatoes were cooked for 30 minutes at 190 degrees. The reasoning is believed to be due to the fact that heat helps to break down the plant's thick cell walls, aiding the body in the uptake of the nutrients that are bound to the cell walls. The downside to heating tomatoes was seen in vitamin C reduction. After 30 minutes of heating at 190 degrees vitamin C decreased by 29%. Vitamin C is highly unstable and can be easily degraded through heat and through water.

Bottom line overcooking your vegetables is never a good idea if you want to get the most nutrient value out of your meal. Limp and lifeless vegetables are never ideal. My suggestion is to lightly steam your veggies just enough to soften them slightly. Boiling vegetables can leach the nutrients into the water, especially water-soluble nutrients like vitamins C and B, so unless you are making a soup, most of the wanted nutrients are discarded through the water. Eat your vegetables topped with olive oil, coconut oil, or butter to help absorb the fat-soluble nutrients. And most importantly eat a variety of colors and types of vegetables on a regular basis to get a plethora of health boosting nutrients.

Day 235- Exercise is the Best Medicine When it Comes to Depression

Anti-depressant drugs cost Americas $10 billion a year, and have many undesirable side-effects. I googled the anti-depressant Zoloft to see what the side effects may be; first of all it had important safety information:

Antidepressant medicines may increase suicidal thoughts or actions in some children, teenagers, and young adults especially within the first few months of treatment. Depression and certain other serious mental illnesses are important causes of suicidal thoughts and actions. Patients of all ages who are started on antidepressant therapy should be monitored appropriately and observed closely for clinical worsening, suicidality, or unusual changes in behavior

Sold already? Wait there is a whole list of possible side-effects:

Anxiety, constipation, decreased sexual desire or ability, diarrhea, dizziness, drowsiness, dry mouth, increased sweating, loss of appetite, nausea, nervousness, stomach upset, tiredness, trouble sleeping, vomiting, severe allergic reactions, bizarre behavior, black or bloody stools, chest pain, confusion, decreased bladder control, decreased concentration, decreased coordination, exaggerated reflexes, fainting, fast or irregular heartbeat, fever, hallucinations, memory loss, panic attacks, aggressiveness, irritability, ringing in the ears, painful erection, seizures, unusual weakness, worsening of depression, etc.

So basically taking the anti-depressant Zoloft can increase depression symptoms???? Sounds like a winner to me.

What else can be done to address depression issues?
  • Addressing blood sugar dysregulation
  • Addressing estrogen dominance
  • EXERCISE!!!!!

An article in TIME - Health states:


In 1999, Duke University researchers demonstrated in a randomized controlled trial that depressed adults who participated in an aerobic-exercise plan improved as much as those treated with sertraline, the drug that, marketed as Zoloft.

Molecular biologists and neurologists have begun to show that exercise may alter brain chemistry in much the same way that antidepressant drugs do — regulating the key neurotransmitters serotonin and norepinephrine. At the University of Georgia, neuroscience professor Philip Holmes and his colleagues have shown that over the course of several weeks, exercise can switch on certain genes that increase the brain's level of galanin, a peptide neurotransmitter that appears to tone down the body's stress response by regulating another brain chemical, norepinephrine.

The result is that exercise primes the brain to show less stress in response to new stimuli. In the case of lab rats and mice, those stimuli include being plunged into very cold water or being suspended by the tail. And while those are not exactly problems most people face, the thinking is that the human neurochemical response may well react similarly, with exercise leaving our brain less susceptible to stress in the face of harmless but unexpected events, like missing an appointment or getting a parking ticket. A little bit of mental strain and excess stimulation from exercise, in other words, may help us to keep day-to-day problems in perspective.


I'm not claiming that anyone should get off their anti-depressants if they already are on them, nor am I saying that exercise will cure depression. But studies have been showing the amazing affects that exercise has on the brain since the 70's so I definitely think that it is an option that doctors should be discussing with their patients, and if nothing else this article is just another kudos on the benefits of exercise.

Day 234- BPA in Baby Bottles?

We hear the dangers of plastic water bottles that contain BPA and we know not to heat up our food in plastic containers. We have known these dangers for years now; that's why we have switched over to containers like Klean Kanteen to carry our water in and we heat our food up in glass containers. So I was surprised to find out that it wasn't until just recently, that states such as California, are passing laws to ban BPA in baby bottles.

So what is BPA and what are the dangers, especially to children?


"Bisphenol A, more commonly known as BPA, is a chemical that has been used for more than 40 years in the manufacture of many hard plastic food containers such as baby bottles and reusable cups and the lining of metal food and beverage cans, including canned liquid infant formula. Trace amounts of BPA can be found in some foods packaged in these containers.


Plastic containers have recycle codes on the bottom. In general, plastics that are marked with recycle codes 1, 2, 4, 5, and 6 are very unlikely to contain BPA. Some, but not all, plastics that are marked with recycle codes 3 or 7 may be made with BPA.


  • * Do not put very hot or boiling liquid that you intend to consume in plastic containers made with BPA. BPA levels rise in food when containers/products made with the chemical are heated and come in contact with the food.
  • * Discard all bottles with scratches, as these may harbor bacteria and, if BPA-containing, lead to great release of BPA."

According to Wikipedia:

"As it has been known to be estrogenic since the mid 1930s, concerns about the use of bisphenol A in consumer products were regularly reported in the news media in 2008, after several governments issued reports questioning its safety, prompting some retailers to remove products containing it from their shelves. A 2010 report from the United States Food and Drug Administration (FDA) raised further concerns regarding exposure of fetuses, infants and young children. In September 2010, Canada became the first country to declare BPA as a toxic substance. In the European Union and Canada, BPA use is banned in baby bottles."

According to the Washington Post:

"Commonly called BPA, the chemical mimics the hormone estrogen and may disrupt the body's endocrine system. Public health advocates say it poses a particular danger to fetuses, infants and children because BPA can interfere with cell function at a point when their bodies are still developing.

Over the past decade, more than 130 studies have linked BPA to breast cancer, obesity and other disorders. In September, the study of BPA in humans found adults with higher levels of bisphenol A had elevated rates of heart disease, diabetes and liver abnormalities. Last year, researchers at the Yale School of Medicine linked BPA to problems with brain function and mood disorders in monkeys.

Much of the new research suggests that BPA has an effect at very low doses -- lower than the current safety standard set by the Food and Drug Administration. The most prominent finding was by the National Toxicology Program, part of the National Institutes of Health, which reported last year that there is "some concern" BPA may affect the brain and behavioral development of fetuses, infants and young children.

The FDA has maintained that BPA is safe, relying largely on two studies that were funded by the chemical industry. In October, the agency was faulted by its own panel of independent science advisers, who said the FDA's position on BPA was scientifically flawed. As a result, the agency is revisiting its position on the chemical."

The good news is that the six leading manufactures for baby bottles has stopped using BPA in their products as of 2009.


The six major U.S. manufacturers of baby bottles and infant feeding cups have confirmed to FDA that as of January 2009, they have not manufactured these products using BPA for the U.S. market. These manufacturers represent more than 90% of the U.S. market. These manufacturers produce brands that include Avent, Doctor Brown’s Natural Flow, Evenflow, First Essentials, Gerber, Munchkin, Nuk, and Playtex.

Yet it will not be until July 2013 until BPA will be officially banned from the market. The California law that will go into affect is the AB1319, which will prohibit the sale of any baby bottles or cups that contain more than 0.1 parts per billion BPA. It will also prohibit the sale of formula and other foods intended for kids 3 and under that contain more than 0.1 parts per billion of BPA.

Now if we could just get them to see how the soy in baby formula affects children's development as well, then we will really be making progress!

During November each year, Movember is responsible for the sprouting of moustaches on thousands of men’s faces, in the US and around the world. With their “Mo’s”, these men raise vital funds and awareness for men’s health, specifically prostate cancer and other cancers that affect men.


On Movember 1st, guys register at Movember.com with a clean-shaven face. For the rest of the month, these selfless and generous men, known as Mo Bros, groom, trim and wax their way into the annals of fine moustachery. Supported by the women in their lives, Mo Sistas, Movember Mo Bros raise funds by seeking out sponsorship for their Mo-growing efforts.

Mo Bros effectively become walking, talking billboards for the 30 days of November. Through their actions and words they raise awareness by prompting private and public conversation around the often ignored issue of men’s health.

At the end of the month, Mo Bros and Mo Sistas celebrate their gallantry and valor by either throwing their own Movember party or attending one of the infamous Gala Partés held around the world by Movember, for Movember.

Day 232- Book Review: Nourishing Traditions

I can't believe that it has taken me 232 days to share with you the book that changed my outlook on nutrition! Nourishing Traditions, written by Sally Fallon and Mary Enig is a book that I would highly recommend to anyone that is interested in nutrition or feeding their family a healthy diet.

I don't know how many times I have referred to the first part of this book, "politically correct nutrition"; learning or reminding myself the importance of certain nutrients and how to allow my body thrive with the proper food. It covers topics such as fats, oil, special diets, how to properly prepare foods, etc.

There are also amazing recipes that are included as well. Nourishing Traditions can teach you how to make your own fermented foods, healthy sauces, meals, drinks,snacks, and even nutritious treats. The recipes are easy to follow, the ingredients are easily accessible, and the outcomes are exceptional.

This book is must have for everyone's kitchen!

Day 231- Vegans do it without Animals

Vegan: A vegan is someone who, for various reasons, chooses to avoid using or consuming animal products. While vegetarians choose not to use flesh foods, vegans also avoid dairy and eggs, as well as fur, leather, wool, down, and cosmetics or chemical products tested on animals.

My view on veganism? It's fine for a short period of time, but used as a long-term diet or lifestyle change? I feel that this may leave your body depleted of key nutrients that only animal products can provide. Being vegan is a choice made for various reasons, and I respect that choice, but I don't agree with it being touted as a nutritious lifestyle or as an option for children. A vegan diet is a great way to cleanse your body, something that I encourage everyone to do a few times a year, but as a permanent diet it will only weaken your body in the long run.

I would image that starting a vegan diet people would experience a "honeymoon" phase. Where they feel great, energized, and maybe they even see that some of their prevalent health issues seem to disappear.

But over time this diet does not nourish the body. Yes, vegans increase their consumption of fruits and vegetables which are full of heathy vitamins and minerals, but over time they may actually become depleted of minerals and health issues may start to emerge. Fat soluble activators are needed to help with mineral absorption. Fat soluble activators are Vitamins A, D, E, K and can only be found in animal products. Vegans also consume a diet high in carbohydrates and very low in proteins, which can cause bone loss, or what I like to call the "skinny fat" body type. Vegans may be able to maintain a lighter weight, but they will have a harder time maintaining or building healthy muscle mass.

What are some other nutrients that may be lacking in a vegan diet?
  • B12~ B12 is a vitamin that is mainly found in animal products like meat, dairy, and eggs. B12 deficiency can affect the nervous system. Vegans will need to make sure that they supplement with vitamin B12, or more specifically methylcobalamin.
  • Vitamin D~ True you can get vitamin D from the sun, but how many of us get enough sunshine everyday without wearing sunscreen? Most of us spend our days inside at a desk, so getting vitamin D that way is not as common as it use to be. Oily fish is one of the best dietary sources of vitamin D. Vegans will have a difficult time finding dietary vitamin D, unless it is a food that has been fortified with the vitamin. Vitamin D is essential for bone development and rebuilding and immune support.
  • Calcium~ Although there are several vegetable sources of calcium, dairy products are the most prominent source of calcium. Calcium, along with vitamin D are essential when it comes to maintaining bone health.
  • Iron~ There are two different sources of iron; heme iron and non-heme iron. Heme iron is only found in animal products and is an easier form for the body to absorb. Vegans can still get iron, but it will be the non-heme version that is found in leafy green vegetables. Iron deficiency can cause an iron anemia, which can diminish energy and affect every system in the body.

There was no way these folks were going to lose fat on this trip. It was, in my view, a type 2 diabetes epidemic in-the-making."

Day 229- Why Kids Have No Filter

You walk into a room and get introduced to a lady wearing a hideous dress, but instead of telling her what you think about her dress, you instead say "it's a pleasure to meet you." Why is it that we can stop ourselves from saying our first reaction or what our brain is thinking?

We can suppress our unacceptable social responses because we have properly developed our frontal lobe. The frontal lobe plays an important role in cognitive maturity, motivation, learning and social responses. Injury or decreased formation of the frontal lobe may lead to depression, loss of emotions, volition, personality, inability to suppress unacceptable social responses, inability to choose between good and bad actions, inability to recognize future consequences resulting from current actions, and difficulty with working memory tasks.

"Dr. Elizabeth Sowell, a member of the UCLA brain research team, led studies of brain development from adolescence to adulthood. She and her colleagues found that the frontal lobe undergoes far more change during adolescence than at any other stage of life. It is also the last part of the brain to develop, which means that even as they become fully capable in other areas, adolescents cannot reason as well as adults." -Juvenile Justice Center

More and more kids are under developing their frontal lobe. Kids are becoming more volatile, violent, and have no filter regarding social responses. Why is this?

I believe that a major reason for this behavior is due to the prevalence of video games. I'm not blaming the violence of the video games on their behavior, but more on their under developed brains. A child's brain in constantly being shaped and developed. So when a child spends most of their days sitting in front of a computer or TV playing video games instead of being outside playing sports, or inside reading and problem solving they are creating a brain imbalance.

According to a article in an UK newspaper:

"Using the most sophisticated technology available, the level of brain activity was measured in hundreds of teenagers playing a Nintendo game and compared to the brain scans of other students doing a simple, repetitive arithmetical exercise. To the surprise of brain-mapping expert Professor Ryuta Kawashima and his team at Tohoku University in Japan, it was found that the computer game only stimulated activity in the parts of the brain associated with vision and movement. In contrast, arithmetic stimulated brain activity in both the left and right hemispheres of the frontal lobe - the area of the brain most associated with learning, memory and emotion.

Most worrying of all was that the frontal lobe, which continues to develop in humans until the age of about 20, also has an important role to play in keeping an individual's behaviour in check.

Whenever you use self-control to refrain from lashing out or doing something you should not, the frontal lobe is hard at work.

Children often do things they shouldn't because their frontal lobes are underdeveloped. The more work done to thicken the fibres connecting the neurons in this part of the brain, the better the child's ability will be to control their behaviour. The more this area is stimulated, the more these fibres will thicken.

The students who played computer games were halting the process of brain development and affecting their ability to control potentially anti-social elements of their behaviour."

Bottom line: get your children involved in other activities! Enroll children in sports at a early age, get them interested in reading, and problem solving especially throughout childhood and adolescents.

Day 245- Halloween Recipe: Toasted Pumpkin Seeds

Last night we carved Pumpkins and made sure that we saved the pumpkin seeds so that we could roast them later for a healthy snack.

  • Rinse pumpkin seeds to remove the pumpkin slim and leftover pulp.
  • I used a coconut oil spray to coat a baking dish, you can do that or use butter, coconut oil, or olive oil.
  • Heat the oven to 200 degrees
  • Coat with pumpkin seeds with celtic sea salt
  • Roast pumpkin seeds until crunchy, but not burnt - about 20 minutes
Health benefits of Pumpkin seeds or Pepitas:
  • May promote prostate health- pumpkin seed contain carotenoids, omega-3 fatty acids, and zinc, which all may help to keep the prostate healthy
  • Protection for men's bones- zinc has been linked to bone mineral density
  • Anti-inflammatory properties
  • A rich source of healthful minerals, protein, and monounsaturated fat
  • Lowering affects on cholesterol- Phytosterols found in pumpkin seeds are believed to reduce blood levels of cholesterol and enhance the immune response.

Day 242- Gym Myths

Myth #1~ Doing 500 crunches a day will get you that 6-pack stomach that you are looking for
  • Sure doing that many crunches will build your abdominal muscles, but that doesn't mean that you will be able to see them. If you really want people to see your muscle definition then it really comes down to cardio and diet. The combination of the two will help you shave off some of the unwanted fat around the mid section. There is no such thing as spot reduction through exercise. And remember that your abdominal muscles are just like any of your other muscles- in that they need a break too.


Myth #2~ Women who lift weights will get big and bulky
  • Women don't have enough testosterone naturally to become that bulky. Yes, you will develop muscle mass and increased bone strength, but the result will be a toned body, not a bulky one. Unless by chance you are taking extra steps to look that way.


Myth #3~ High reps/low weight is best
  • The only time those small pink weights should be used is maybe in an aerobics class, otherwise step up the weight! This way does not burn more fat or does the best job at toning your body. The rule of thumb is however many reps you want to do, pick a weight that fatigues you when you reach that number. If you do 12 bicep curls with good form and you can do more, increase your weight. As we mentioned before, unless it is your goal you will not get bulky.

Myth #4~ You didn't get a good workout unless you are sore the next day
  • Just by getting off the couch and doing something active you have accomplished something. You don't always have to work yourself so hard that you can't walk the next day to make it a successful workout. Being sore means that you torn muscle fibers and usually occurs if you are new to working out or if you have changed up your routine. Soreness is not a marker for how well your workout was. You may want to consider some other factors: did you sweat, did you burn more calories than you would have if you didn't work out, did it boost your mood. Exercise isn't always how it makes your body feel, it can be mental too.

Day 241- Recipe: Chicken Tortilla Soup


Ingredients:
  • 3 organic chicken breast
  • 2 cans of diced tomatoes
  • 2 cans (rinsed) black beans
  • 1/2 bag frozen corn (avoid if gluten-free)
  • 1 packet of Trader Joe's Taco seasoning
  • 1 onion, diced
  • 2 jalapeno, diced
  • 1 carton organic free-range chicken stock
  • 1 cup water
Optional Toppings:
  • 1 avocado, diced
  • shredded cheese
  • crumbled tortilla chips
  • Creme fraiche
Directions:
  1. Boil chicken for about 20 minutes or until no longer pink.
  2. Using two forks shred the chicken
  3. In crock pot add all the ingredients except chicken
  4. Cook on high for about 2 hours, add chicken, and continue to cook for awhile longer
  5. Serve with desired toppings

Day 240- Rats lived longer with only water than when fed Cornflakes

Let me first give you a little bit of information about me. When I moved out of my parents house and went off to college, I decided to live off cereal. I ate cereal and non-fat milk for breakfast, lunch, and dinner. For the most part it was cold cereal like honey bunches of oats or frosted mini wheats, or the healthier, not as sweetened varieties. Life was my all time favorite. I also always had instant hot oatmeal packets in my purse for those times that I was in a hurry and just needed to add hot water.

In some twisted way I believed that this was healthy. When I started my journey in the nutrition profression I read the book, "Beating the Food Giants" by Paul Stitt. In the book Paul writes about his time working for a food corporation where he came upon shocking research studies involving rats and dried cereal.

The study, which apparently started as a joke, had some interesting results. Although the study has never been published, nor has anyone to my knowledge other than Paul seen the study, it still has to make you wonder if the manufacturing of grains is harmful for consumption. Needless to say, it, along with other health assessments, made me open my eyes to my current diet. I'm proud to say that cereal is something that I consume once in a blue moon, and fat-free milk no longer has a place in my home.

Below is some information on the extruding process of grains, and the famous rat/cereal study found by Paul.


PACKAGED CEREALS

These cereals are produced by a process called extrusion. They take the grains from the farmer, pay them a pittance for them, make the grains into a slurry and put them in a tank, a machine called an extruder. The grains are forced out of a little hole at high temperature and pressure and shaped into little o's and flakes and shredded wheat and so forth, or puffed up. A blade slices off each little flake which is carried past a nozzle and sprayed with a coating of oil and sugar to seal off the cereal from the ravages of milk and to give it crunch.

Paul Stitt has written about the extrusion process used for these cereals which treats every grain with very high heat and high pressure and destroys much of the nutrients in the grains. It destroys the fatty acids; it even destroys the chemical vitamins that are added. The amino acids are rendered very toxic by this process. The amino acid lysine, a crucial nutrient, is especially ravaged by extrusion. This is how all the boxed cereals are made, even the ones in the health food stores. They are all made in the same way and mostly in the same factories. All dry cereals that come in boxes are extruded cereals.

The only advances made in the extrusion process are those which will cut cost regardless of how these will alter the nutrient content of the product. Cereals are a multi-billion dollar business which has created huge fortunes. You would think there would be some studies on the effect on man or animals. There are no published studies and there are only two unpublished studies which were done on rats.

THE RAT EXPERIMENTS

Paul Stitt wrote about an experiment conducted by a cereal company in which four sets of rats were given special diets. One group received plain whole wheat, water and synthetic vitamins and minerals. A second group received puffed wheat (an extruded cereal), water and the same nutrient solution. A third set was given water and white sugar. A fourth set was given nothing but water and chemical nutrients. The rats which received the whole wheat lived over a year on this diet. The rats that got nothing but water and vitamins lived about two months. The animals on a white sugar and water diet lived about a month. The company's own laboratory study showed that the rats given the vitamins, water and all the puffed wheat they wanted, died within two weeks---they died before the rats that got no food at all. It wasn't a matter of the rats dying of malnutrition. Results like these suggested that there was something actually very toxic in the puffed wheat itself! Proteins are very similar to certain toxins in molecular structure, and the pressure of the puffing process may produce chemical changes, which turn a nutritious grain into a poisonous substance.

Another unpublished experiment was carried out in 1960. Researchers at Ann Arbor University were given 18 laboratory rats. They were divided into three groups: one group received corn flakes and water; a second group was given the cardboard box that the Cornflakes came in and water; the control group received rat chow and water. The rats in the control group remained in good health throughout the experiment. The rats eating the box became lethargic and eventually died of malnutrition. The rats receiving the Cornflakes and water died before the rats that were eating the box! But before death, the Cornflakes rats developed schizophrenic behaviour, threw fits, bit each other and finally went into convulsions. Autopsy revealed dysfunction of the pancreas, liver and kidneys and degeneration of the nerves of the spine, all signs of insulin shock. The startling conclusion of this study is that there was more nourishment in the box than there was in the Cornflakes. This experiment was actually designed as a joke, but the results were far from funny. The results were never published and similar studies have not been conducted.

Most of America eats this kind of cereal. In fact, the USDA is gloating over the fact that children today get the vast majority of their important nutrients from the nutrients added to these boxed cereals. Many of them are at least 50% sugar; but there are many so-called health food cereals sold in the health food stores, and they are made by the same method. They use whole grains and they may use better quality sweeteners, but they are made by the same method. It may come as a shock to you, but these whole grain extruded cereals are probably more dangerous, because they are higher in protein and it is the proteins in these cereals that are so denatured by this type of processing.

THE EXTRUSION PROCESS

When we put these cereals through an extruder, it alters the structure of the proteins. "Seins", which comprise the majority of proteins in corn, are located in spherical organelles called protein bodies. One study investigated change in protein body, shape and release of encapsulated alphaseins as a result of the extrusion processing. During extrusion, they found that the protein bodies were completely disrupted and the alphaseins dispersed. The results suggest that seins in Cornflakes, particularly extruded ones, are not confined to rigid protein bodies but can interact with each other and other components of the system forming new compounds which are completely foreign to the human body. The extrusion process breaks down the organelles, disperses the proteins and the proteins become toxic. When they are disrupted in this way, you have absolute chaos in your food, and it can result in a disruption of the nervous system.

Day 239- Kombucha “elixir of life?"

First of all what is Kombucha?

Kombucha (kom-boo-cha) is a drink made from fermented sweet tea, using a symbiotic colony of bacteria that is called a scoby. You will also hear this bacteria called the "mother," because of it's ability to reproduce, or a mushroom, due to its appearance.

Kombucha has been noted for it's array of health boosting properties; from preventing cancer, detoxifying the the body, improving digestion, to boosting the immune system and increasing energy.

Organic Acids in Kombucha

  • Glucuronic acid: It is well considered as one of the most significant detoxifiers present in human body. When any sort of toxins successfully enter to liver, they are flushed out via the kidneys by the assistance of Glucuronic acid. There’s no way out to toxins after once glucuronic acid bound them. Day 238- I will Pump You Up...Or Inflame You

If you are an athlete or body builder you may have seen a new product on the market, claiming to increase endurance and vasodilation which may help to increase muscle mass. There are many of these products out there under names such as, Xero Limits EPO, N.O 370, Jack3D, BSN N.O-xplode, NOX Surge, etc. What all of these products have in common is that they are addressing the Nitric Oxide response in the body.

Nitric Oxide is a gas naturally found in the body that's main function is conveying information between cells. Nitric Oxide is involved in three pathways in the body, which we call the Nitric Oxide Synthases (NOS); which are a family of enzymes that catalyze the production of nitric oxide (NO) from L-arginine.
  • nNOS- Neuronal Nitric Oxide Synthases, produces NO in nervous tissue in both the central and peripheral nervous system. This pathway helps to increase cell communication.
  • eNOS- Endothelial Nitric Oxide Synthases, generates NO in blood vessels and is involved in regulating vascular function.
  • iNOS- Inducible Nitric Oxide Synthases, produces NO as a defense mechanism, which may cause increase in body inflammation.
Nitric oxide gives more blood to organs when needed. When working out nitric oxide will release more blood to the areas that you are working, after a meal nitric oxide send more blood to the stomach to help digest food, during sexual stimulation nitric oxide is responsible for the relaxation of blood vessels in the penis allowing for an erection (anti-impotence drugs such as Viagra work in much the same way).

Nitric oxide signaling is mediated in mammals by the calcium/calmodulin controlled isoenzymes eNOS and nNOS; iNOS on the other hand is involved in immune response and is not dependent on calcium/calmodulin.

The problem with the supplements on the market today is that they do not address all three of the nitric oxide pathways. As I mentioned above there is the eNOS, nNOS, and iNOS pathways. The eNOS, and nNOS pathways are what are being addressed in the majority of the NO supplements on the market today, and people are seeing terrific results with them. The issue is that the iNOS pathway is also being turned on and this may be causing problems with increased inflammation. The supplements on the market today contain L-Arginine which can trigger any or all of the three pathways, but having iNOS stimulated is not ideal and can cause some serious damage to the body in the long run.

Day 236- Does Cooking Your Veggies Defeat the Purpose

We hear about the health "freaks" that go on the raw food diet, so we assume that eating our veggies raw is how to receive the most nutrients, right? Contrary to what you may think, research has shown that not all vegetables are created equal when it comes to nutrients loss during cooking. It has been shown that we may even benefit from cooking certain vegetables as it may unlock certain nutrients that will be easier for our bodies to digest and assimilate.
So now the question is, "to cook or not to cook."

Cruciferous vegetables, such as broccoli have been shown to be the most sensitive to cooking. If cooked for more than a few minutes, the time it takes you to walk to another room, answer your phone, and tell them you have to call them back, may have depleted may of the nutrients in these veggies. The heat from cooking may eliminate the antioxidants, and the enzyme that breaks down chemicals called glucosinolates into cancer-fighting agents. So maybe I was right to turn down that bowl of broccoli soup that my parents would try to make me eat; I knew that I wasn't missing anything nutritionally.

Carrots on the other hand have been shown to be more nutritious when cooked, since heating causes the vegetable to soften slightly, unlocking some of the nutrients. Green beans, beets, and garlic also all did well with heat - maintaining beneficial phytonutrients after most kinds of cooking.

We are also aware of our fat soluble vitamins like vitamin A. Carotenoids are the pigments in vegetables and fruits that are responsible for the red, yellow, and orange coloring. Carotenoids are also found in dark green vegetables, like spinach. Carotenoids convert to vitamin A in the body and have been found to have antioxidant activities that may help to protect our cells against damage caused by free radicals. So eating your tomatoes and spinach drizzled with olive oil, may help your body to absorb nutrients better.

A study at Iowa State University had participates eat salad greens and tomatoes with various types of dressings; fat-free, low-fat, or dressing that contained olive oil. They then took blood samples to see precise measurements of the amounts of nutrients absorbed. They found that, not to their surprise, people who had eaten fat-free or low-fat dressings did not absorb the beneficial carotenoids from the salad, and that only when they had eaten the oil-based dressing did they get the nutrients.

Lycopene, is a potent antioxidant found in tomatoes, and is responsible for tomatoes red pigment. A 2002 study published in Journal of Agriculture and Food Chemistry, found that cooking actually boosts the amount of lycopene in tomatoes. In the study lycopene rose 35% after the tomatoes were cooked for 30 minutes at 190 degrees. The reasoning is believed to be due to the fact that heat helps to break down the plant's thick cell walls, aiding the body in the uptake of the nutrients that are bound to the cell walls. The downside to heating tomatoes was seen in vitamin C reduction. After 30 minutes of heating at 190 degrees vitamin C decreased by 29%. Vitamin C is highly unstable and can be easily degraded through heat and through water.

Bottom line overcooking your vegetables is never a good idea if you want to get the most nutrient value out of your meal. Limp and lifeless vegetables are never ideal. My suggestion is to lightly steam your veggies just enough to soften them slightly. Boiling vegetables can leach the nutrients into the water, especially water-soluble nutrients like vitamins C and B, so unless you are making a soup, most of the wanted nutrients are discarded through the water. Eat your vegetables topped with olive oil, coconut oil, or butter to help absorb the fat-soluble nutrients. And most importantly eat a variety of colors and types of vegetables on a regular basis to get a plethora of health boosting nutrients.

Day 235- Exercise is the Best Medicine When it Comes to Depression

Anti-depressant drugs cost Americas $10 billion a year, and have many undesirable side-effects. I googled the anti-depressant Zoloft to see what the side effects may be; first of all it had important safety information:

Antidepressant medicines may increase suicidal thoughts or actions in some children, teenagers, and young adults especially within the first few months of treatment. Depression and certain other serious mental illnesses are important causes of suicidal thoughts and actions. Patients of all ages who are started on antidepressant therapy should be monitored appropriately and observed closely for clinical worsening, suicidality, or unusual changes in behavior

Sold already? Wait there is a whole list of possible side-effects:

Anxiety, constipation, decreased sexual desire or ability, diarrhea, dizziness, drowsiness, dry mouth, increased sweating, loss of appetite, nausea, nervousness, stomach upset, tiredness, trouble sleeping, vomiting, severe allergic reactions, bizarre behavior, black or bloody stools, chest pain, confusion, decreased bladder control, decreased concentration, decreased coordination, exaggerated reflexes, fainting, fast or irregular heartbeat, fever, hallucinations, memory loss, panic attacks, aggressiveness, irritability, ringing in the ears, painful erection, seizures, unusual weakness, worsening of depression, etc.

So basically taking the anti-depressant Zoloft can increase depression symptoms???? Sounds like a winner to me.

What else can be done to address depression issues?

  • Addressing estrogen dominance
  • EXERCISE!!!!!

An article in TIME - Health states:


In 1999, Duke University researchers demonstrated in a randomized controlled trial that depressed adults who participated in an aerobic-exercise plan improved as much as those treated with sertraline, the drug that, marketed as Zoloft.

Molecular biologists and neurologists have begun to show that exercise may alter brain chemistry in much the same way that antidepressant drugs do — regulating the key neurotransmitters serotonin and norepinephrine. At the University of Georgia, neuroscience professor Philip Holmes and his colleagues have shown that over the course of several weeks, exercise can switch on certain genes that increase the brain's level of galanin, a peptide neurotransmitter that appears to tone down the body's stress response by regulating another brain chemical, norepinephrine.

The result is that exercise primes the brain to show less stress in response to new stimuli. In the case of lab rats and mice, those stimuli include being plunged into very cold water or being suspended by the tail. And while those are not exactly problems most people face, the thinking is that the human neurochemical response may well react similarly, with exercise leaving our brain less susceptible to stress in the face of harmless but unexpected events, like missing an appointment or getting a parking ticket. A little bit of mental strain and excess stimulation from exercise, in other words, may help us to keep day-to-day problems in perspective.


I'm not claiming that anyone should get off their anti-depressants if they already are on them, nor am I saying that exercise will cure depression. But studies have been showing the amazing affects that exercise has on the brain since the 70's so I definitely think that it is an option that doctors should be discussing with their patients, and if nothing else this article is just another kudos on the benefits of exercise.

Day 234- BPA in Baby Bottles?

We hear the dangers of plastic water bottles that contain BPA and we know not to heat up our food in plastic containers. We have known these dangers for years now; that's why we have switched over to containers like Klean Kanteen to carry our water in and we heat our food up in glass containers. So I was surprised to find out that it wasn't until just recently, that states such as California, are passing laws to ban BPA in baby bottles.

So what is BPA and what are the dangers, especially to children?


"Bisphenol A, more commonly known as BPA, is a chemical that has been used for more than 40 years in the manufacture of many hard plastic food containers such as baby bottles and reusable cups and the lining of metal food and beverage cans, including canned liquid infant formula. Trace amounts of BPA can be found in some foods packaged in these containers.


Plastic containers have recycle codes on the bottom. In general, plastics that are marked with recycle codes 1, 2, 4, 5, and 6 are very unlikely to contain BPA. Some, but not all, plastics that are marked with recycle codes 3 or 7 may be made with BPA.


  • * Do not put very hot or boiling liquid that you intend to consume in plastic containers made with BPA. BPA levels rise in food when containers/products made with the chemical are heated and come in contact with the food.
  • * Discard all bottles with scratches, as these may harbor bacteria and, if BPA-containing, lead to great release of BPA."

According to Wikipedia:

"As it has been known to be estrogenic since the mid 1930s, concerns about the use of bisphenol A in consumer products were regularly reported in the news media in 2008, after several governments issued reports questioning its safety, prompting some retailers to remove products containing it from their shelves. A 2010 report from the United States Food and Drug Administration (FDA) raised further concerns regarding exposure of fetuses, infants and young children. In September 2010, Canada became the first country to declare BPA as a toxic substance. In the European Union and Canada, BPA use is banned in baby bottles."

According to the Washington Post:

"Commonly called BPA, the chemical mimics the hormone estrogen and may disrupt the body's endocrine system. Public health advocates say it poses a particular danger to fetuses, infants and children because BPA can interfere with cell function at a point when their bodies are still developing.

Over the past decade, more than 130 studies have linked BPA to breast cancer, obesity and other disorders. In September, the study of BPA in humans found adults with higher levels of bisphenol A had elevated rates of heart disease, diabetes and liver abnormalities. Last year, researchers at the Yale School of Medicine linked BPA to problems with brain function and mood disorders in monkeys.

Much of the new research suggests that BPA has an effect at very low doses -- lower than the current safety standard set by the Food and Drug Administration. The most prominent finding was by the National Toxicology Program, part of the National Institutes of Health, which reported last year that there is "some concern" BPA may affect the brain and behavioral development of fetuses, infants and young children.

The FDA has maintained that BPA is safe, relying largely on two studies that were funded by the chemical industry. In October, the agency was faulted by its own panel of independent science advisers, who said the FDA's position on BPA was scientifically flawed. As a result, the agency is revisiting its position on the chemical."

The good news is that the six leading manufactures for baby bottles has stopped using BPA in their products as of 2009.


The six major U.S. manufacturers of baby bottles and infant feeding cups have confirmed to FDA that as of January 2009, they have not manufactured these products using BPA for the U.S. market. These manufacturers represent more than 90% of the U.S. market. These manufacturers produce brands that include Avent, Doctor Brown’s Natural Flow, Evenflow, First Essentials, Gerber, Munchkin, Nuk, and Playtex.

Yet it will not be until July 2013 until BPA will be officially banned from the market. The California law that will go into affect is the AB1319, which will prohibit the sale of any baby bottles or cups that contain more than 0.1 parts per billion BPA. It will also prohibit the sale of formula and other foods intended for kids 3 and under that contain more than 0.1 parts per billion of BPA.

Now if we could just get them to see how the soy in baby formula affects children's development as well, then we will really be making progress!

Day 233- Come Support Movember!!!

What is Movember?

ABOUT THE CAMPAIGN

During November each year, Movember is responsible for the sprouting of moustaches on thousands of men’s faces, in the US and around the world. With their “Mo’s”, these men raise vital funds and awareness for men’s health, specifically prostate cancer and other cancers that affect men.


On Movember 1st, guys register at Movember.com with a clean-shaven face. For the rest of the month, these selfless and generous men, known as Mo Bros, groom, trim and wax their way into the annals of fine moustachery. Supported by the women in their lives, Mo Sistas, Movember Mo Bros raise funds by seeking out sponsorship for their Mo-growing efforts.

Mo Bros effectively become walking, talking billboards for the 30 days of November. Through their actions and words they raise awareness by prompting private and public conversation around the often ignored issue of men’s health.

At the end of the month, Mo Bros and Mo Sistas celebrate their gallantry and valor by either throwing their own Movember party or attending one of the infamous Gala Partés held around the world by Movember, for Movember.

Day 232- Book Review: Nourishing Traditions

I can't believe that it has taken me 232 days to share with you the book that changed my outlook on nutrition! Nourishing Traditions, written by Sally Fallon and Mary Enig is a book that I would highly recommend to anyone that is interested in nutrition or feeding their family a healthy diet.

I don't know how many times I have referred to the first part of this book, "politically correct nutrition"; learning or reminding myself the importance of certain nutrients and how to allow my body thrive with the proper food. It covers topics such as fats, oil, special diets, how to properly prepare foods, etc.

There are also amazing recipes that are included as well. Nourishing Traditions can teach you how to make your own fermented foods, healthy sauces, meals, drinks,snacks, and even nutritious treats. The recipes are easy to follow, the ingredients are easily accessible, and the outcomes are exceptional.

This book is must have for everyone's kitchen!

Day 231- Vegans do it without Animals

Vegan: A vegan is someone who, for various reasons, chooses to avoid using or consuming animal products. While vegetarians choose not to use flesh foods, vegans also avoid dairy and eggs, as well as fur, leather, wool, down, and cosmetics or chemical products tested on animals.

My view on veganism? It's fine for a short period of time, but used as a long-term diet or lifestyle change? I feel that this may leave your body depleted of key nutrients that only animal products can provide. Being vegan is a choice made for various reasons, and I respect that choice, but I don't agree with it being touted as a nutritious lifestyle or as an option for children. A vegan diet is a great way to cleanse your body, something that I encourage everyone to do a few times a year, but as a permanent diet it will only weaken your body in the long run.

I would image that starting a vegan diet people would experience a "honeymoon" phase. Where they feel great, energized, and maybe they even see that some of their prevalent health issues seem to disappear.

But over time this diet does not nourish the body. Yes, vegans increase their consumption of fruits and vegetables which are full of heathy vitamins and minerals, but over time they may actually become depleted of minerals and health issues may start to emerge. Fat soluble activators are needed to help with mineral absorption. Fat soluble activators are Vitamins A, D, E, K and can only be found in animal products. Vegans also consume a diet high in carbohydrates and very low in proteins, which can cause bone loss, or what I like to call the "skinny fat" body type. Vegans may be able to maintain a lighter weight, but they will have a harder time maintaining or building healthy muscle mass.

What are some other nutrients that may be lacking in a vegan diet?
  • B12~ B12 is a vitamin that is mainly found in animal products like meat, dairy, and eggs. B12 deficiency can affect the nervous system. Vegans will need to make sure that they supplement with vitamin B12, or more specifically methylcobalamin.
  • Vitamin D~ True you can get vitamin D from the sun, but how many of us get enough sunshine everyday without wearing sunscreen? Most of us spend our days inside at a desk, so getting vitamin D that way is not as common as it use to be. Oily fish is one of the best dietary sources of vitamin D. Vegans will have a difficult time finding dietary vitamin D, unless it is a food that has been fortified with the vitamin. Vitamin D is essential for bone development and rebuilding and immune support.
  • Calcium~ Although there are several vegetable sources of calcium, dairy products are the most prominent source of calcium. Calcium, along with vitamin D are essential when it comes to maintaining bone health.
  • Iron~ There are two different sources of iron; heme iron and non-heme iron. Heme iron is only found in animal products and is an easier form for the body to absorb. Vegans can still get iron, but it will be the non-heme version that is found in leafy green vegetables. Iron deficiency can cause an iron anemia, which can diminish energy and affect every system in the body.

"Now I’m not one to judge. Okay, I am, but I usually keep my mouth shut – except herein. I watched at every meal as overweight, unhealthy people piled their plates with at least two pounds of bread, pasta, rice, potatoes, beans, desert cake, and a glass of fruit juice. Sometimes they went back for more. By my calculations these people were consuming 200 to 300 or more grams of (mostly simple) carbohydrates at each of three meals. There was no way these folks were going to lose fat on this trip. It was, in my view, a type 2 diabetes epidemic in-the-making."

Day 229- Why Kids Have No Filter

You walk into a room and get introduced to a lady wearing a hideous dress, but instead of telling her what you think about her dress, you instead say "it's a pleasure to meet you." Why is it that we can stop ourselves from saying our first reaction or what our brain is thinking?

We can suppress our unacceptable social responses because we have properly developed our frontal lobe. The frontal lobe plays an important role in cognitive maturity, motivation, learning and social responses. Injury or decreased formation of the frontal lobe may lead to depression, loss of emotions, volition, personality, inability to suppress unacceptable social responses, inability to choose between good and bad actions, inability to recognize future consequences resulting from current actions, and difficulty with working memory tasks.

"Dr. Elizabeth Sowell, a member of the UCLA brain research team, led studies of brain development from adolescence to adulthood. She and her colleagues found that the frontal lobe undergoes far more change during adolescence than at any other stage of life. It is also the last part of the brain to develop, which means that even as they become fully capable in other areas, adolescents cannot reason as well as adults." -Juvenile Justice Center

More and more kids are under developing their frontal lobe. Kids are becoming more volatile, violent, and have no filter regarding social responses. Why is this?

I believe that a major reason for this behavior is due to the prevalence of video games. I'm not blaming the violence of the video games on their behavior, but more on their under developed brains. A child's brain in constantly being shaped and developed. So when a child spends most of their days sitting in front of a computer or TV playing video games instead of being outside playing sports, or inside reading and problem solving they are creating a brain imbalance.

According to a article in an UK newspaper:

"Using the most sophisticated technology available, the level of brain activity was measured in hundreds of teenagers playing a Nintendo game and compared to the brain scans of other students doing a simple, repetitive arithmetical exercise. To the surprise of brain-mapping expert Professor Ryuta Kawashima and his team at Tohoku University in Japan, it was found that the computer game only stimulated activity in the parts of the brain associated with vision and movement. In contrast, arithmetic stimulated brain activity in both the left and right hemispheres of the frontal lobe - the area of the brain most associated with learning, memory and emotion.

Most worrying of all was that the frontal lobe, which continues to develop in humans until the age of about 20, also has an important role to play in keeping an individual's behaviour in check.

Whenever you use self-control to refrain from lashing out or doing something you should not, the frontal lobe is hard at work.

Children often do things they shouldn't because their frontal lobes are underdeveloped. The more work done to thicken the fibres connecting the neurons in this part of the brain, the better the child's ability will be to control their behaviour. The more this area is stimulated, the more these fibres will thicken.

The students who played computer games were halting the process of brain development and affecting their ability to control potentially anti-social elements of their behaviour."

Bottom line: get your children involved in other activities! Enroll children in sports at a early age, get them interested in reading, and problem solving especially throughout childhood and adolescents.
