Cucumber Salad
Ingredients:
- 2 seedless cucumbers
- 1 tablespoon sugar
- 1/4 cup distilled white vinegar
- 2 teaspoons grainy mustard (if gluten-free make sure it is specified on the label)
- 2 tablespoons extra-virgin olive oil
- Cut cucumbers into thin rounds (a mandolin works great for this)
- Toss with 2 teaspoons salt in a colander and let drain for about 30 minutes. Squeeze excess liquid from cucumbers
- Whisk the sugar, vinegar, olive oil and mustard together in a large bowl, then stir in cucumbers.
- Let cucumbers chill for about 2 hours in the mixture
- Drain cucumbers, saving the excess marinade to pour over cucumbers after serving if you choose.
