Kale Salad
Ingredients:
- 2 tablespoons dried currants
- 7 tablespoons white balsamic vinegar
- 1 tablespoons unseasoned rice vinegar
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 bunches kale, thinly sliced
- 2 tablespoons pine nuts
- Parmesan cheese
Directions:
- Place 5 tablespoons of balsamic vinegar in a bowl with the currants, soak overnight. Drain currants.
- In separate bowl add remaining 2 tablespoons white balsamic vinegar, rice vinegar, honey oil, and salt. Mix
- Add kale, currants, and pine nuts and coat.
- Let marinate for 20 minutes at room temperature.
- Sprinkle with salt and pepper and parmesan to taste
