Day 310- Kale Salad

Another great recipe from a friend!

Kale Salad

Ingredients:
  • 2 tablespoons dried currants
  • 7 tablespoons white balsamic vinegar
  • 1 tablespoons unseasoned rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 bunches kale, thinly sliced
  • 2 tablespoons pine nuts
  • Parmesan cheese
Directions:
  1. Place 5 tablespoons of balsamic vinegar in a bowl with the currants, soak overnight. Drain currants.
  2. In separate bowl add remaining 2 tablespoons white balsamic vinegar, rice vinegar, honey oil, and salt. Mix
  3. Add kale, currants, and pine nuts and coat.
  4. Let marinate for 20 minutes at room temperature.
  5. Sprinkle with salt and pepper and parmesan to taste
